- • 2 ribeye or New York strip steaks (1.5 inches thick)
- • 3 tablespoons butter
- • 4 cloves garlic, smashed
- • 3 sprigs fresh thyme
- • 2 sprigs fresh rosemary
- • 2 tablespoons olive oil
- • Flaky sea salt
- • Freshly cracked black pepper
Instructions
- Step 1: Remove steaks from the fridge 30-45 minutes before cooking. Pat very dry with paper towels. Season generously with salt and pepper on all sides.
- Step 2: Heat a cast-iron skillet over high heat until smoking. Add olive oil.
- Step 3: Carefully place steaks in the skillet. Sear without moving for 3-4 minutes until a deep golden-brown crust forms.
- Step 4: Flip and sear the other side for 3 minutes.
- Step 5: Reduce heat to medium. Add butter, garlic, thyme, and rosemary to the pan.
- Step 6: As butter melts and foams, tilt the pan and continuously spoon the garlic herb butter over the steaks for 2 minutes.
- Step 7: Cook to desired doneness (125°F for medium-rare). Rest on a cutting board for 5 minutes.
- Step 8: Slice against the grain and spoon the pan butter over the top. Finish with flaky sea salt.
