- • 2 lbs beef shank
- • 1 lb pork bones
- • 2 stalks lemongrass, bruised
- • 3 tablespoons annatto oil
- • 2 tablespoons shrimp paste
- • 3 tablespoons chili flakes
- • 1 lb thick rice noodles (bun bo hue)
- • Fish sauce and sugar to taste
- • Fresh herbs, banana blossom, cabbage
- • Lime wedges, chili, and onion
Instructions
- Step 1: Parboil beef and pork bones, drain, rinse, and clean.
- Step 2: Simmer bones with lemongrass in water for 4-6 hours.
- Step 3: Make chili oil: heat annatto oil with chili flakes and shrimp paste.
- Step 4: Add beef shank, cook until tender. Remove and slice.
- Step 5: Season broth with fish sauce, sugar, and chili oil.
- Step 6: Cook noodles, assemble bowls with beef and pork.
- Step 7: Ladle hot broth over, serve with herbs, cabbage, and condiments.
