Ingredients

  • • 1/3 cup chia seeds
  • • 1 cup milk (almond, oat, or regular)
  • • 1/2 cup coconut milk or Greek yogurt
  • • 2 tablespoons maple syrup or honey
  • • 1 teaspoon vanilla extract
  • • Pinch of salt
  • • Fresh berries (strawberries, blueberries, raspberries)
  • • Granola for topping
  • • Sliced almonds or coconut flakes (optional)

Instructions

  1. Step 1: In a mason jar or bowl, combine chia seeds, milk, coconut milk (or yogurt), maple syrup, vanilla, and salt.
  2. Step 2: Stir well, making sure chia seeds are evenly distributed and not clumped together.
  3. Step 3: Cover and refrigerate for at least 4 hours, or overnight. The chia seeds will absorb the liquid and form a thick pudding.
  4. Step 4: In the morning, give it a good stir. If too thick, add a splash of milk to reach desired consistency.
  5. Step 5: Divide into serving bowls or jars. Top with fresh berries, granola, and sliced almonds or coconut flakes.
  6. Step 6: Serve cold. Keeps in the fridge for up to 3 days.
