Ingredients
- • 12 rice paper wrappers
- • 12 cooked shrimp, halved lengthwise
- • 8 oz cooked pork or chicken, sliced thin
- • 4 oz rice vermicelli, cooked
- • 1 head butter lettuce
- • Fresh mint and Thai basil
- • 1/2 cucumber, julienned
- • Peanut dipping sauce (hoisin, peanut butter, garlic, chili)
Instructions
- Step 1: Prepare all fillings and arrange on a work surface.
- Step 2: Dip one rice paper in warm water for 5-10 seconds until pliable.
- Step 3: Place on a damp towel. Layer lettuce, herbs, vermicelli, pork, and cucumber.
- Step 4: Fold bottom up, fold sides in, place shrimp along the fold, and roll tightly.
- Step 5: The shrimp should be visible through the wrapper.
- Step 6: Repeat with remaining wrappers. Serve with peanut dipping sauce.
