- • 1 lb pork belly for chashu
- • 4 portions fresh ramen noodles
- • 4 soft-boiled eggs
- • 1 cup soy sauce
- • 1/2 cup mirin
- • 4 cloves garlic
- • 2 inch ginger, sliced
- • Green onions
- • Nori sheets
- • Sesame oil
- • White pepper
Instructions
- Step 1: Blanch pork bones in boiling water for 10 minutes, then rinse and clean.
- Step 2: Place bones in a large pot, cover with fresh water, add garlic and ginger.
- Step 3: Boil vigorously for 8-12 hours, adding water as needed, until broth is creamy white.
- Step 4: Make chashu: roll pork belly, tie with string, braise in soy sauce, mirin, and water for 2-3 hours.
- Step 5: Marinate soft-boiled eggs in chashu braising liquid for at least 4 hours.
- Step 6: Cook ramen noodles according to package directions.
- Step 7: Assemble bowls: noodles, hot broth, sliced chashu, halved egg, nori, and green onions.
