Ingredients

  • • 2 cups all-purpose flour
  • • 4 tablespoons oil or ghee
  • • 1/2 teaspoon salt
  • • Water as needed
  • • 3 large potatoes, boiled and mashed
  • • 1/2 cup green peas
  • • 1 teaspoon cumin seeds
  • • 1 teaspoon garam masala
  • • 1 teaspoon coriander powder
  • • 1/2 teaspoon red chili powder
  • • Fresh cilantro, chopped
  • • Oil for deep frying

Instructions

  1. Step 1: Make dough: mix flour, oil, salt, and water. Knead until smooth. Rest 30 minutes.
  2. Step 2: Make filling: heat oil, add cumin seeds. Add peas, potatoes, and all spices. Cool.
  3. Step 3: Divide dough into balls. Roll each into an oval, cut in half.
  4. Step 4: Form each half into a cone, fill with potato mixture, seal edges with water.
  5. Step 5: Heat oil to 325°F. Fry samosas on low heat until golden and crispy, about 8-10 minutes.
  6. Step 6: Drain on paper towels. Serve hot with mint chutney and tamarind chutney.
