Ingredients

  • • 12 large shrimp, peeled and deveined
  • • 1 sweet potato, sliced thin
  • • 1 zucchini, sliced
  • • 1 cup green beans
  • • 1 cup cake flour
  • • 1 egg yolk
  • • 1 cup ice-cold sparkling water
  • • Vegetable oil for frying
  • • Tentsuyu dipping sauce
  • • Grated daikon

Instructions

  1. Step 1: Heat oil to 350°F in a deep pot or wok.
  2. Step 2: Pat all ingredients completely dry with paper towels.
  3. Step 3: Make batter just before frying: mix egg yolk with ice-cold sparkling water, add flour all at once, stir briefly (lumps are okay).
  4. Step 4: Keep batter cold by placing bowl over ice.
  5. Step 5: Dip vegetables and shrimp in batter, let excess drip off.
  6. Step 6: Fry in small batches for 2-3 minutes until light golden and crispy.
  7. Step 7: Drain on wire rack, serve immediately with tentsuyu and grated daikon.
