- • 12 large shrimp, peeled and deveined
- • 1 sweet potato, sliced thin
- • 1 zucchini, sliced
- • 1 cup green beans
- • 1 cup cake flour
- • 1 egg yolk
- • 1 cup ice-cold sparkling water
- • Vegetable oil for frying
- • Tentsuyu dipping sauce
- • Grated daikon
Instructions
- Step 1: Heat oil to 350°F in a deep pot or wok.
- Step 2: Pat all ingredients completely dry with paper towels.
- Step 3: Make batter just before frying: mix egg yolk with ice-cold sparkling water, add flour all at once, stir briefly (lumps are okay).
- Step 4: Keep batter cold by placing bowl over ice.
- Step 5: Dip vegetables and shrimp in batter, let excess drip off.
- Step 6: Fry in small batches for 2-3 minutes until light golden and crispy.
- Step 7: Drain on wire rack, serve immediately with tentsuyu and grated daikon.
