Tandoori Chicken - Dinner recipe

Ingredients

  • • 1 whole chicken, cut into pieces (or 2 lbs legs and thighs)
  • • 1 cup yogurt
  • • 3 tablespoons lemon juice
  • • 2 tablespoons tandoori masala
  • • 1 teaspoon Kashmiri red chili powder
  • • 1 teaspoon garam masala
  • • 1 teaspoon cumin
  • • 4 cloves garlic, minced
  • • 1 inch ginger, grated
  • • 2 tablespoons oil
  • • Salt to taste
  • • Lemon wedges and onion rings for serving

Instructions

  1. Step 1: Make deep cuts in chicken pieces for marinade to penetrate.
  2. Step 2: Mix yogurt, lemon juice, all spices, garlic, ginger, oil, and salt.
  3. Step 3: Coat chicken thoroughly. Marinate at least 4 hours, preferably overnight.
  4. Step 4: Preheat oven to 425°F. Place chicken on a wire rack over a baking sheet.
  5. Step 5: Bake for 35-45 minutes until charred and cooked through, flipping halfway.
  6. Step 6: Optionally broil for last 5 minutes for extra char.
  7. Step 7: Serve with lemon wedges, onion rings, and mint chutney.
