Ingredients
- • 3 lbs chicken wings, split at joint
- • 2 teaspoons baking powder
- • 1 teaspoon salt
- • 1 teaspoon garlic powder
- • 1 teaspoon smoked paprika
- • For Buffalo sauce: 1/2 cup Frank's RedHot sauce
- • 4 tablespoons unsalted butter
- • 1 tablespoon white vinegar
- • 1/2 teaspoon garlic powder
- • Celery sticks and blue cheese dip to serve
Instructions
- Step 1: Pat wings completely dry with paper towels. Toss with baking powder, salt, garlic powder, and paprika.
- Step 2: Arrange in a single layer on a wire rack set over a baking sheet. Refrigerate uncovered for at least 1 hour (or overnight) for extra crispiness.
- Step 3: Preheat oven to 425°F. Bake wings for 25 minutes, flip, then bake another 20–25 minutes until deeply golden and crispy.
- Step 4: While wings bake, make Buffalo sauce: melt butter in a small saucepan, then whisk in hot sauce, vinegar, and garlic powder.
- Step 5: Transfer hot wings to a large bowl. Pour Buffalo sauce over and toss to coat thoroughly.
- Step 6: Serve immediately with celery sticks and blue cheese or ranch dipping sauce.
