- • 3 egg yolks
- • 2 cans (14 oz each) sweetened condensed milk
- • 3/4 cup key lime juice (or regular lime juice)
- • Zest of 2 limes
- • 2 cups heavy whipping cream (for topping)
- • 3 tablespoons powdered sugar (for topping)
- • Lime slices for garnish
Instructions
- Step 1: Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie plate. Bake for 8 minutes. Let cool.
- Step 2: Whisk egg yolks until pale. Add sweetened condensed milk and whisk until smooth.
- Step 3: Stir in key lime juice and lime zest. The acid in the lime juice will thicken the mixture.
- Step 4: Pour filling into the cooled crust. Bake for 15 minutes until set (center will be slightly jiggly).
- Step 5: Cool to room temperature, then refrigerate for at least 4 hours until firm.
- Step 6: Before serving, whip heavy cream with powdered sugar until stiff peaks form. Spread or pipe over the chilled pie.
