Banh Xeo (Vietnamese Crepes) - Dinner recipe

Ingredients

  • • 1 cup rice flour
  • • 1/4 cup cornstarch
  • • 1/2 teaspoon turmeric
  • • 1 cup coconut milk
  • • 1 cup water
  • • 8 oz pork belly, sliced thin
  • • 12 shrimp, peeled
  • • 2 cups bean sprouts
  • • Vegetable oil
  • • Lettuce, herbs, and nuoc cham for serving

Instructions

  1. Step 1: Mix rice flour, cornstarch, turmeric, coconut milk, and water into thin batter.
  2. Step 2: Heat oil in a non-stick pan over medium-high heat.
  3. Step 3: Add pork and shrimp, cook briefly. Push to one side.
  4. Step 4: Pour in batter, swirl to coat pan. Add bean sprouts to one half.
  5. Step 5: Cover and cook until edges are crispy and lacy, about 3-4 minutes.
  6. Step 6: Fold in half, slide onto plate. Repeat with remaining batter.
  7. Step 7: Wrap pieces in lettuce with herbs, dip in nuoc cham.
