Ingredients

  • • 4 cups day-old cooked rice (cold)
  • • 3 eggs, beaten
  • • 1 cup mixed vegetables (peas, carrots, corn)
  • • 4 green onions, sliced
  • • 3 cloves garlic, minced
  • • 3 tablespoons soy sauce
  • • 1 tablespoon oyster sauce
  • • 1 tablespoon sesame oil
  • • 2 tablespoons vegetable oil
  • • 1 cup cooked protein (shrimp, chicken, or pork), diced
  • • White pepper to taste

Instructions

  1. Step 1: Break up cold rice with your hands to separate all the grains — this prevents clumping.
  2. Step 2: Heat vegetable oil in a wok over the highest heat until smoking. Add beaten eggs, scramble quickly for 30 seconds, and break into small pieces. Remove.
  3. Step 3: Add a bit more oil. Stir-fry garlic for 10 seconds. Add mixed vegetables and cook for 2 minutes.
  4. Step 4: Add the cold rice. Press it flat against the hot wok and let it sit for 30 seconds to get some char. Then toss and repeat.
  5. Step 5: Add soy sauce, oyster sauce, and white pepper. Toss vigorously to coat every grain.
  6. Step 6: Add the cooked protein and scrambled eggs back in. Toss to combine.
  7. Step 7: Drizzle with sesame oil and top with sliced green onions. Serve immediately while hot.
