Classic French Onion Soup - Soups recipe

Ingredients

  • • 4 large onions, thinly sliced
  • • 4 tablespoons butter
  • • 2 tablespoons olive oil
  • • 1 teaspoon sugar
  • • 1/2 cup dry white wine
  • • 6 cups beef broth
  • • 2 sprigs fresh thyme
  • • 1 bay leaf
  • • 1 baguette, sliced
  • • 2 cups grated Gruyère cheese
  • • Salt and pepper to taste

Instructions

  1. Step 1: Melt butter with olive oil in a large Dutch oven over medium heat. Add onions and cook, stirring occasionally, for 45-50 minutes until deeply caramelized.
  2. Step 2: Sprinkle sugar over onions in the last 10 minutes to help caramelization.
  3. Step 3: Add wine and scrape up any brown bits from the bottom. Cook until wine evaporates.
  4. Step 4: Add beef broth, thyme, and bay leaf. Simmer for 20 minutes. Season with salt and pepper.
  5. Step 5: Preheat broiler. Ladle soup into oven-safe bowls. Top each with bread slices and cheese.
  6. Step 6: Broil until cheese is bubbling and golden, about 3-4 minutes. Serve immediately.
