Ingredients
- • 2 cups aged kimchi, chopped
- • 8 oz pork belly, sliced
- • 1 block firm tofu, cubed
- • 1/4 cup kimchi juice
- • 1 tablespoon gochugaru (Korean chili flakes)
- • 1 tablespoon gochujang
- • 2 cups water or anchovy broth
- • 2 green onions, chopped
- • 1 teaspoon sesame oil
- • Steamed rice for serving
Instructions
- Step 1: In a pot, sauté pork belly until fat renders and edges are crispy.
- Step 2: Add kimchi and stir-fry for 3-4 minutes.
- Step 3: Add kimchi juice, gochugaru, gochujang, and water. Bring to a boil.
- Step 4: Reduce heat and simmer for 15-20 minutes.
- Step 5: Add tofu cubes, cook for another 5 minutes.
- Step 6: Drizzle with sesame oil, top with green onions. Serve with rice.
