Ingredients

  • • 1 1/2 lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • • 1/2 cup cornstarch
  • • 1/4 cup all-purpose flour
  • • 1 large egg, beaten
  • • Vegetable oil for deep frying
  • • 6-8 dried red chili peppers
  • • 3 cloves garlic, minced
  • • 1 tablespoon fresh ginger, minced
  • • 3 green onions, sliced
  • • 1/4 cup soy sauce
  • • 3 tablespoons rice vinegar
  • • 3 tablespoons hoisin sauce
  • • 2 tablespoons sugar
  • • 1 tablespoon sesame oil
  • • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • • Sesame seeds for garnish
  • • Steamed broccoli and white rice for serving

Instructions

  1. Step 1: Toss chicken pieces in a mixture of 1/2 cup cornstarch, flour, and beaten egg until evenly coated.
  2. Step 2: Heat 2 inches of vegetable oil to 350°F in a deep pot or wok.
  3. Step 3: Fry chicken in batches for 4-5 minutes until golden and crispy. Drain on paper towels.
  4. Step 4: In a small bowl, whisk soy sauce, rice vinegar, hoisin sauce, sugar, and sesame oil.
  5. Step 5: In a clean wok or skillet, heat 1 tablespoon oil over high heat. Add dried chili peppers, garlic, and ginger. Stir-fry 30 seconds.
  6. Step 6: Pour in sauce mixture and bring to a simmer. Add cornstarch slurry and cook until thickened, about 1 minute.
  7. Step 7: Add crispy chicken to the sauce and toss to coat evenly.
