- • 2 cups graham cracker crumbs
- • 1/3 cup sugar
- • 6 tablespoons melted butter
- • 32 oz (4 packages) cream cheese, softened
- • 1 1/4 cups sugar
- • 5 large eggs
- • 2 teaspoons vanilla extract
- • 1/4 cup all-purpose flour
- • 1 cup sour cream
- • Zest of 1 lemon
- • Pinch of salt
Instructions
- Step 1: Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom and 1 inch up the sides of a 9-inch springform pan.
- Step 2: Bake crust for 8 minutes. Let cool. Reduce oven to 325°F.
- Step 3: Beat cream cheese and sugar until smooth. Add eggs one at a time, beating on low after each.
- Step 4: Mix in vanilla, flour, sour cream, lemon zest, and salt until just combined. Do not overmix.
- Step 5: Pour filling over cooled crust. Tap pan on counter to release air bubbles.
- Step 6: Place springform pan inside a larger pan with 1 inch of hot water (water bath).
- Step 7: Bake for 60-65 minutes until edges are set but center still jiggles slightly.
- Step 8: Turn off oven, crack the door, and let cheesecake cool inside for 1 hour. Refrigerate at least 6 hours before slicing.
