Ingredients

  • • 1 lb ground pork
  • • 1 lb pork belly, thinly sliced
  • • 3 tablespoons fish sauce
  • • 2 tablespoons sugar
  • • 4 cloves garlic, minced
  • • 1 shallot, minced
  • • 1 tablespoon vegetable oil
  • • 8 oz rice vermicelli noodles
  • • Nuoc cham dipping sauce
  • • Fresh lettuce, herbs, and pickled vegetables

Instructions

  1. Step 1: Mix ground pork with half the fish sauce, sugar, garlic, and shallot. Form into small patties.
  2. Step 2: Marinate pork belly slices with remaining fish sauce, sugar, garlic, and shallot.
  3. Step 3: Grill or broil pork patties and belly slices until charred and cooked through.
  4. Step 4: Cook rice vermicelli according to package, drain and rinse with cold water.
  5. Step 5: Prepare nuoc cham: mix fish sauce, water, lime juice, sugar, garlic, and chili.
  6. Step 6: Serve pork in the dipping sauce bowl. Eat with noodles, lettuce, and herbs.
