- • 2 cups basmati rice, soaked
- • 1.5 lbs chicken or lamb, cut into pieces
- • 2 large onions, thinly sliced
- • 1 cup yogurt
- • 1/2 cup warm milk with saffron
- • 4 tablespoons ghee
- • 2 teaspoons biryani masala
- • 1 teaspoon garam masala
- • 4 green cardamom pods
- • 4 cloves
- • 1 cinnamon stick
- • Fresh mint and cilantro
- • Fried onions for garnish
Instructions
- Step 1: Marinate meat in yogurt, biryani masala, ginger, garlic, and salt for 2 hours.
- Step 2: Fry onions in ghee until deep golden brown. Remove half for garnish.
- Step 3: Add marinated meat to remaining onions. Cook until meat is 80% done.
- Step 4: Parboil rice with whole spices until 70% cooked. Drain.
- Step 5: Layer rice over meat. Top with saffron milk, mint, cilantro, and fried onions.
- Step 6: Seal pot with dough or foil. Cook on low heat for 30-40 minutes (dum).
- Step 7: Gently mix layers when serving. Garnish with more fried onions.
