- • 4 large bell peppers (mixed colors), halved and seeded
- • 1 lb ground beef
- • 1 cup cooked white rice
- • 1 (14.5 oz) can diced tomatoes, drained
- • 1 (8 oz) can tomato sauce
- • 1 small onion, diced
- • 2 cloves garlic, minced
- • 1 teaspoon Italian seasoning
- • 1 teaspoon Worcestershire sauce
- • Salt and pepper to taste
- • 1.5 cups shredded mozzarella or cheddar cheese
- • Fresh parsley for garnish
Instructions
- Step 1: Preheat oven to 375°F. Place bell pepper halves cut-side-up in a baking dish. Drizzle lightly with olive oil and season with salt.
- Step 2: Roast peppers for 10 minutes while you prepare the filling.
- Step 3: Brown ground beef with onion in a skillet over medium heat until cooked through. Drain fat. Add garlic and cook 1 minute.
- Step 4: Stir in diced tomatoes, half the tomato sauce, cooked rice, Italian seasoning, Worcestershire sauce, salt, and pepper. Simmer 5 minutes.
- Step 5: Spoon the beef mixture generously into each pepper half. Pour remaining tomato sauce into the bottom of the baking dish.
- Step 6: Cover with foil and bake 25 minutes. Uncover, top with cheese, and bake another 10 minutes until bubbly.
- Step 7: Garnish with fresh parsley and serve hot.
