Ingredients

  • • 4 large bell peppers (mixed colors), halved and seeded
  • • 1 lb ground beef
  • • 1 cup cooked white rice
  • • 1 (14.5 oz) can diced tomatoes, drained
  • • 1 (8 oz) can tomato sauce
  • • 1 small onion, diced
  • • 2 cloves garlic, minced
  • • 1 teaspoon Italian seasoning
  • • 1 teaspoon Worcestershire sauce
  • • Salt and pepper to taste
  • • 1.5 cups shredded mozzarella or cheddar cheese
  • • Fresh parsley for garnish

Instructions

  1. Step 1: Preheat oven to 375°F. Place bell pepper halves cut-side-up in a baking dish. Drizzle lightly with olive oil and season with salt.
  2. Step 2: Roast peppers for 10 minutes while you prepare the filling.
  3. Step 3: Brown ground beef with onion in a skillet over medium heat until cooked through. Drain fat. Add garlic and cook 1 minute.
  4. Step 4: Stir in diced tomatoes, half the tomato sauce, cooked rice, Italian seasoning, Worcestershire sauce, salt, and pepper. Simmer 5 minutes.
  5. Step 5: Spoon the beef mixture generously into each pepper half. Pour remaining tomato sauce into the bottom of the baking dish.
  6. Step 6: Cover with foil and bake 25 minutes. Uncover, top with cheese, and bake another 10 minutes until bubbly.
