- • 1.5 lbs ground beef
- • 1/2 lb ground pork
- • 1/2 cup breadcrumbs
- • 1/2 cup milk
- • 2 eggs
- • 1 small onion, finely diced
- • 2 cloves garlic, minced
- • 1 tablespoon Worcestershire sauce
- • 1 teaspoon dried thyme
- • 1/2 cup ketchup
- • 2 tablespoons brown sugar
- • 1 tablespoon Dijon mustard
- • Salt and pepper to taste
Instructions
- Step 1: Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Step 2: Soak breadcrumbs in milk for 5 minutes. In a large bowl, combine ground beef, pork, soaked breadcrumbs, eggs, onion, garlic, Worcestershire sauce, thyme, salt, and pepper.
- Step 3: Mix gently with your hands until just combined — do not overwork or the meatloaf will be tough.
- Step 4: Shape the mixture into a loaf on the prepared baking sheet.
- Step 5: Mix together ketchup, brown sugar, and Dijon mustard. Spread half over the top of the meatloaf.
- Step 6: Bake for 45 minutes. Spread remaining glaze over the top and bake for 15 more minutes until internal temperature reaches 160°F.
- Step 7: Let rest for 10 minutes before slicing. The resting allows the juices to redistribute.
