- • 1 lb fettuccine pasta
- • 2 large chicken breasts, sliced thin
- • 4 tablespoons butter
- • 3 cloves garlic, minced
- • 2 cups heavy cream
- • 1.5 cups freshly grated Parmesan cheese
- • Salt and black pepper to taste
- • 2 tablespoons olive oil
- • Fresh parsley, chopped, for garnish
- • Extra Parmesan for serving
Instructions
- Step 1: Cook fettuccine in salted boiling water according to package directions. Reserve 1/2 cup pasta water before draining.
- Step 2: Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken 5-6 minutes per side until cooked through. Remove and slice.
- Step 3: In the same skillet, melt butter over medium heat. Add garlic and sauté 1 minute until fragrant.
- Step 4: Pour in heavy cream and bring to a gentle simmer. Cook 3-4 minutes until slightly thickened.
- Step 5: Remove from heat and stir in Parmesan cheese until melted and smooth. Season with salt and pepper.
- Step 6: Add drained pasta to the sauce, tossing to coat. Add pasta water as needed to loosen the sauce.
- Step 7: Top with sliced chicken, fresh parsley, and extra Parmesan. Serve immediately.
