Ingredients

  • • 6 slices bacon, chopped
  • • 1 medium onion, diced
  • • 3 cloves garlic, minced
  • • 2 lbs Yukon gold potatoes, peeled and diced
  • • 4 cups chicken broth
  • • 1 cup heavy cream
  • • 1.5 cups shredded cheddar cheese
  • • 1/2 cup sour cream
  • • Salt and pepper to taste
  • • 3 tablespoons chives or green onions, sliced
  • • Extra cheese and bacon for topping

Instructions

  1. Step 1: Cook bacon in a large pot over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving 2 tablespoons of drippings in the pot.
  2. Step 2: Sauté onion in the bacon drippings for 4-5 minutes until softened. Add garlic and cook 1 minute more.
  3. Step 3: Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer 15-18 minutes until potatoes are very tender.
  4. Step 4: Use a potato masher or immersion blender to mash or blend about half the soup to your desired consistency.
