Ingredients

  • • 4 cube steaks (about 6 oz each), tenderized
  • • 2 cups all-purpose flour
  • • 1 teaspoon garlic powder
  • • 1 teaspoon onion powder
  • • 1 teaspoon paprika
  • • 1 teaspoon salt
  • • 1/2 teaspoon black pepper
  • • 1/2 teaspoon cayenne pepper
  • • 2 large eggs
  • • 1/2 cup buttermilk
  • • Vegetable oil for frying
  • • 3 tablespoons pan drippings or butter (for gravy)
  • • 1/4 cup all-purpose flour (for gravy)
  • • 2 1/2 cups whole milk
  • • Salt and cracked black pepper to taste

Instructions

  1. Step 1: In a shallow dish, mix 2 cups flour with garlic powder, onion powder, paprika, salt, pepper, and cayenne.
  2. Step 2: In another dish, whisk eggs and buttermilk together.
  3. Step 3: Dredge each steak in flour, dip in egg wash, then dredge in flour again, pressing to coat well.
  4. Step 4: Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat to 350°F.
  5. Step 5: Fry steaks 3-4 minutes per side until deep golden brown and cooked through. Drain on a wire rack.
  6. Step 6: For the gravy: pour off all but 3 tablespoons of pan drippings. Whisk in 1/4 cup flour and cook 1 minute.
  7. Step 7: Gradually whisk in milk, scraping up browned bits. Cook until thickened, about 5 minutes. Season generously with salt and cracked black pepper.
