White Chicken Chili - Dinner recipe

Ingredients

  • • 1.5 lbs boneless skinless chicken breasts
  • • 2 cans (15 oz) white beans, drained
  • • 1 can (4 oz) diced green chiles
  • • 4 cups chicken broth
  • • 1 onion, diced
  • • 3 cloves garlic, minced
  • • 1 teaspoon cumin
  • • 1 teaspoon oregano
  • • 1/2 cup sour cream
  • • Juice of 1 lime
  • • Shredded cheese, avocado, cilantro for topping
  • • Salt and pepper to taste

Instructions

  1. Step 1: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 4 minutes. Add garlic, cumin, and oregano. Cook 1 minute.
  2. Step 2: Add chicken breasts, chicken broth, white beans, and green chiles. Bring to a boil.
  3. Step 3: Reduce heat, cover, and simmer for 20-25 minutes until chicken is cooked through.
  4. Step 4: Remove chicken and shred with two forks. Return shredded chicken to the pot.
  5. Step 5: Stir in sour cream and lime juice. Season with salt and pepper.
