- • 1.5 lbs boneless skinless chicken breasts
- • 2 cans (15 oz) white beans, drained
- • 1 can (4 oz) diced green chiles
- • 4 cups chicken broth
- • 1 onion, diced
- • 3 cloves garlic, minced
- • 1 teaspoon cumin
- • 1 teaspoon oregano
- • 1/2 cup sour cream
- • Juice of 1 lime
- • Shredded cheese, avocado, cilantro for topping
- • Salt and pepper to taste
Instructions
- Step 1: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 4 minutes. Add garlic, cumin, and oregano. Cook 1 minute.
- Step 2: Add chicken breasts, chicken broth, white beans, and green chiles. Bring to a boil.
- Step 3: Reduce heat, cover, and simmer for 20-25 minutes until chicken is cooked through.
- Step 4: Remove chicken and shred with two forks. Return shredded chicken to the pot.
- Step 5: Stir in sour cream and lime juice. Season with salt and pepper.
- Step 6: Serve topped with shredded cheese, avocado slices, and fresh cilantro.
