Ingredients
- • 3 lbs beef bones
- • 1 lb beef brisket
- • 8 oz rice noodles (banh pho)
- • 1 large onion, halved and charred
- • 4 inch ginger, halved and charred
- • 6 star anise
- • 4 cloves
- • 1 cinnamon stick
- • 1 tablespoon coriander seeds
- • 3 tablespoons fish sauce
- • 1 tablespoon sugar
- • Fresh herbs: Thai basil, cilantro, mint
- • Bean sprouts, lime wedges, sliced chilies, hoisin sauce
Instructions
- Step 1: Parboil bones for 10 minutes, drain, rinse, and clean thoroughly.
- Step 2: Char onion and ginger over open flame or under broiler until blackened.
- Step 3: Toast star anise, cloves, cinnamon, and coriander in a dry pan until fragrant.
- Step 4: Add bones, brisket, charred aromatics, and spices to a large pot. Cover with water.
- Step 5: Simmer for 6-8 hours, skimming impurities. Remove brisket when tender (about 2 hours).
- Step 6: Strain broth, season with fish sauce and sugar.
- Step 7: Cook noodles, slice brisket thin. Assemble bowls and pour hot broth over.
- Step 8: Serve with fresh herbs, bean sprouts, lime, and condiments.
