Ingredients

  • • 3 lbs beef bones
  • • 1 lb beef brisket
  • • 8 oz rice noodles (banh pho)
  • • 1 large onion, halved and charred
  • • 4 inch ginger, halved and charred
  • • 6 star anise
  • • 4 cloves
  • • 1 cinnamon stick
  • • 1 tablespoon coriander seeds
  • • 3 tablespoons fish sauce
  • • 1 tablespoon sugar
  • • Fresh herbs: Thai basil, cilantro, mint
  • • Bean sprouts, lime wedges, sliced chilies, hoisin sauce

Instructions

  1. Step 1: Parboil bones for 10 minutes, drain, rinse, and clean thoroughly.
  2. Step 2: Char onion and ginger over open flame or under broiler until blackened.
  3. Step 3: Toast star anise, cloves, cinnamon, and coriander in a dry pan until fragrant.
  4. Step 4: Add bones, brisket, charred aromatics, and spices to a large pot. Cover with water.
  5. Step 5: Simmer for 6-8 hours, skimming impurities. Remove brisket when tender (about 2 hours).
  6. Step 6: Strain broth, season with fish sauce and sugar.
  7. Step 7: Cook noodles, slice brisket thin. Assemble bowls and pour hot broth over.
  8. Step 8: Serve with fresh herbs, bean sprouts, lime, and condiments.
