- • 1 large onion, diced
- • 1 green bell pepper, diced
- • 4 cloves garlic, minced
- • 2 (14.5 oz) cans diced tomatoes
- • 1 (15 oz) can tomato sauce
- • 2 (15 oz) cans kidney beans, drained
- • 2 tablespoons chili powder
- • 1 teaspoon cumin
- • 1 teaspoon smoked paprika
- • 1/2 teaspoon oregano
- • Salt and cayenne pepper to taste
- • Shredded cheddar, sour cream, and chives for topping
Instructions
- Step 1: Brown ground beef in a large pot over medium-high heat, breaking it apart, about 8 minutes. Drain excess fat.
- Step 2: Add onion and green pepper to the pot. Cook 5 minutes until softened. Add garlic and cook 1 more minute.
- Step 3: Stir in chili powder, cumin, paprika, and oregano. Cook 1-2 minutes to toast the spices.
- Step 4: Add diced tomatoes, tomato sauce, and kidney beans. Stir well to combine.
- Step 5: Bring to a boil, then reduce heat to low. Simmer uncovered for 30-35 minutes, stirring occasionally, until thickened.
- Step 6: Season with salt and cayenne pepper to taste.
