- • 3 lbs oxtail, cut into pieces
- • 1 lb beef tripe, cleaned and sliced
- • 1 cup peanut butter
- • 1/4 cup ground toasted rice
- • 1/4 cup annatto seeds soaked in 1 cup water
- • 2 cups bok choy
- • 1 cup string beans, cut into 2-inch pieces
- • 1 eggplant, sliced
- • 1 onion, chopped
- • 4 cloves garlic, minced
- • Bagoong (shrimp paste) for serving
Instructions
- Step 1: Boil oxtail and tripe in water for 2-3 hours until very tender. Reserve the broth.
- Step 2: Sauté garlic and onion. Add the annatto water for color.
- Step 3: Add 4 cups of the reserved broth and bring to a boil.
- Step 4: Stir in peanut butter and ground rice until smooth.
- Step 5: Add the cooked meat. Simmer for 15 minutes.
- Step 6: Add vegetables and cook until tender. Serve with bagoong on the side.
