Ingredients

  • • 4 cups chicken broth
  • • 3 large eggs, beaten
  • • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • • 1 teaspoon sesame oil
  • • 1/2 teaspoon ground ginger
  • • 1/4 teaspoon white pepper
  • • 2 green onions, thinly sliced
  • • Salt to taste
  • • A few drops of soy sauce (optional)

Instructions

  1. Step 1: Bring chicken broth to a boil in a medium saucepan over medium-high heat.
  2. Step 2: Stir in the cornstarch slurry and cook 1-2 minutes until the broth slightly thickens.
  3. Step 3: Reduce heat to a gentle simmer. Season with ginger, white pepper, and salt.
  4. Step 4: While stirring the broth in one direction with a fork, slowly drizzle in the beaten eggs in a thin stream. The eggs will form delicate ribbons.
  5. Step 5: Remove from heat immediately. Stir in sesame oil.
