- • 6 egg yolks
- • 3/4 cup sugar
- • 16 oz mascarpone cheese
- • 2 cups heavy whipping cream
- • 2 cups strong espresso, cooled
- • 3 tablespoons coffee liqueur (optional)
- • 1 package (7 oz) ladyfinger biscuits (Savoiardi)
- • Unsweetened cocoa powder for dusting
- • Dark chocolate shavings (optional)
Instructions
- Step 1: Whisk egg yolks and sugar together until thick and pale yellow, about 4 minutes.
- Step 2: Add mascarpone cheese and beat until smooth and creamy.
- Step 3: In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the mascarpone mixture.
- Step 4: Mix cooled espresso with coffee liqueur if using.
- Step 5: Quickly dip each ladyfinger into the espresso — don't soak, just a 1-2 second dip on each side.
- Step 6: Arrange a layer of dipped ladyfingers in the bottom of a 9x13 dish. Spread half the mascarpone cream over the top.
- Step 7: Repeat with a second layer of dipped ladyfingers and remaining cream. Smooth the top.
- Step 8: Cover and refrigerate for at least 6 hours or overnight. Dust generously with cocoa powder and chocolate shavings before serving.
