- • 2 egg yolks
- • 6 tablespoons all-purpose flour

- Step 3: Whisk in powdered sugar until combined. Add eggs and egg yolks, whisking until smooth.
- Step 4: Fold in flour until just combined. Divide batter evenly among prepared ramekins.

👨🍳 Chef's Notes
💡 Pro Tips
- • Generously butter and cocoa-dust the ramekins — any bare spot will cause the cake to stick and tear when inverted.
- • The batter can be made up to 24 hours ahead and refrigerated; add 1–2 minutes to the bake time if cooking straight from cold.
- • The window between underbaked (completely liquid) and overbaked (no lava) is narrow — check at 11 minutes and trust a slightly jiggly centre.
- • Use the best dark chocolate you can find (at least 60% cacao); it makes a noticeable difference in depth of flavour.
🔄 Variations
- • Add a teaspoon of espresso powder to the batter to amplify the chocolate flavour without a coffee taste.
- • Tuck a small square of salted caramel or a frozen raspberry into the center before baking for a flavour surprise.
- • For a white-chocolate version, swap dark chocolate for white chocolate and reduce the sugar by 2 tablespoons.
📦 Storage
Unbaked filled ramekins can be refrigerated for up to 24 hours or frozen for up to 1 month. Bake directly from frozen, adding 3–4 minutes to the bake time. Once baked, they cannot be stored — serve immediately.
🍽️ Serving Suggestions
- • Serve with a scoop of best-quality vanilla bean ice cream so the temperature contrast is dramatic.
- • A dusting of powdered sugar and a few fresh raspberries or mint leaves makes a beautiful plate.
- • A dessert wine like Banyuls or tawny port pairs wonderfully with the rich chocolate.
