- • 4 pork loin cutlets
- • 1 cup flour
- • 2 eggs, beaten
- • 2 cups panko breadcrumbs
- • 1 box Japanese curry roux
- • 2 potatoes, cubed
- • 2 carrots, sliced
- • 1 onion, diced
- • 4 cups water
- • Vegetable oil for frying
- • Steamed rice for serving
Instructions
- Step 1: Pound pork cutlets to even thickness. Season with salt and pepper.
- Step 2: Dredge in flour, dip in egg, then coat with panko.
- Step 3: Make curry: sauté onion until soft, add carrots and potatoes, cover with water.
- Step 4: Simmer vegetables for 20 minutes until tender. Add curry roux and stir until thickened.
- Step 5: Heat oil to 350°F. Fry cutlets for 4-5 minutes per side until golden and cooked through.
- Step 6: Slice katsu and serve over rice with curry sauce on the side.
