Katsu Curry - Dinner recipe

Ingredients

  • • 4 pork loin cutlets
  • • 1 cup flour
  • • 2 eggs, beaten
  • • 2 cups panko breadcrumbs
  • • 1 box Japanese curry roux
  • • 2 potatoes, cubed
  • • 2 carrots, sliced
  • • 1 onion, diced
  • • 4 cups water
  • • Vegetable oil for frying
  • • Steamed rice for serving

Instructions

  1. Step 1: Pound pork cutlets to even thickness. Season with salt and pepper.
  2. Step 2: Dredge in flour, dip in egg, then coat with panko.
  3. Step 3: Make curry: sauté onion until soft, add carrots and potatoes, cover with water.
  4. Step 4: Simmer vegetables for 20 minutes until tender. Add curry roux and stir until thickened.
  5. Step 5: Heat oil to 350°F. Fry cutlets for 4-5 minutes per side until golden and cooked through.
  6. Step 6: Slice katsu and serve over rice with curry sauce on the side.
